Lifestyle | Light Lunch Idea's with Eggs

Regular readers of my blog will know I like to mix things up a bit so today's post is one for all the foodies out there.  

One of the staple products in our diet are eggs and rightly so because not only are they full of nutrients and protein but they are also versatile so you can create a whole host of different meals and treats with them. Here are some light bites using eggs I sometimes eat for my lunch which are quick and easy!


Scrambled Eggs on Toast With Smoked Salmon

I love creamy scrambled eggs made in the microwave with milk, butter and seasoning. It's such an easy meal to put together yet is filling and can be combined with extra's such as smoked salmon to make it even more tasty.


Poached Eggs on Toast

I often have poached eggs on toast drizzled in ketchup as it's a filling yet healthy meal. I love when the yolk of the egg oozes over the crispy toast.. yum!


Omelette

I love omlette because you throw almost any ingredients into them and create a completely different result each time. Some of my favourite's include, cheese, ham and mushroom, plain and Spanish omlette's. The latter are particularly nice cold too so you can make a large one and eat it over a couple of days if you're and about and in need of a speedy lunch.


Soft Boiled Egg with Bacon and Soldiers

Eggs with soldiers take me back to my childhood as my dad used to often cook this for me with the added extra of bacon occasionally. It makes a nice twist to a delicious classic and there's something very satisfying about dipping your toast in a golden, runny yolk.


Eggs Benedict

This meal takes a few more ingredients than the others but it's richer and more luxurious. I only have eggs benedict on the rare occasion but when I do I really enjoy it.


Fried Egg Sandwich

Okay, this one isn't the healthiest option but it sure is tasty! A fried egg sandwich is a simple treat that uses minimum ingredients and when combined with brown and red sauce (yes, I know it's weird I like both) it's even better!


Egg Mayonnaise Sandwich

If you fancy a sandwich for lunch but something which isn't hot so can be transported then maybe an egg mayonnaise is up your street. You simply boil eggs and crush them with seasoning and mayonnaise to create a tasty filling for your bread of choice!


Nicoise Salad

A super healthy option for lunch which is full of protein is a nicoise salad. Traditionally this includes hard boiled eggs, tuna, plum tomatoes, new potato's and salad leaves or lettuce but of course you can mix this up with other ingredients too. This is a particular favourite of mine in the Summer as it's light and fresh.


Croque Madame

A Croque Madame is a meal I only discovered this Summer and is a twist on the Croque Monsieur which to put it simply is a cheese and ham toastie. The exciting twist with a Croque Madame, however, is that it has a fried egg on top!

Haagen Dazs Easter Egg Event

Hello Everyone! Last week I was lucky enough to attend an event with Haagen Dazs at their restaurant in Leicester Square, London which sounded absolutely amazing. 

With Easter fast approaching it was an Easter Master Class where we were joined by the food stylist, writer and presenter Phil Mundy. He showed us how to create his latest Easter inspired creation which first appeared in the restaurant on Saturday and we were even given the opportunity to make our own version! It was really lovely to experience what the dish would look like before it was released on the public and be taught how to make it ourselves. I definitely plan to re-create it at home!

After Phil showed us what to do and after some advise about flavour combinations, with the champagne still flowing we began to make our creations. This started with half a dark chocolate shell that had been been kindly moulded into half an egg shape before we arrived. We then got to choose what ice creams we wanted to fill in the center of the shell as well as on the plate and some tasters on the side (yum!). I chose salted caramel as the main filling and also teamed it with raspberry sorbet which worked surprisingly well together. I also chose mango sorbet and chocolate ice cream to add a little something to the side of my plate. 

Once our creations had spent a few minutes back in the freezer to stop them from melting too quickly we were then let loose on the toppings. The selection was amazing and it was very tempting to pile lots of tasty treats on my plate but I had a good idea of how I wanted my final design to look so I kept things to a minimum. I added a three raspberries as I know it's best with decorations to have things in odd numbers, as well as some chocolate sprinkes, crispies, glitter (wow!) and the well known Haagen Dazs Chocolate stamp. 

Overall I was really pleased with how my plate turned out and I think the final piece was very delicate. After taking some pictures we were then able to eat our creations and wow it tasted incredible! I don't think I've ever tasted any better ice cream or sorbet and the combination of flavours were amazing. It was the end to the perfect evening and before leaving we even had time for a quick selfie (including Rachel from Beauty Queen UK, Zoe from Zoe London and Lorna from Studs and Dreams).

If you want to try out this delicious Haagen Dazs Easter creation it will be available until 25th April 2014 at the Leicester Square restaurant. It is a set design so you won't be able to pick your own ice cream and toppings but it still looks and tastes incredible.

Baker Days Letterbox Cake Review

It's pretty hard to believe but today is my blogs one year anniversary and the lovely people Baker Days have sent the perfect cake to celebrate with.  This cake is called a 'Letterbox Cake', something which I have never heard of before but is a genius idea.  Basically this cake is the perfect size to fit through your letterbox so you don't need to worry about collecting it or not being in when it is delivered as it will be at home ready and waiting for you.  The biggest fear with a cake being posted is the risk of damage but Baker Days packed this cake very securely so it looked perfect when it arrived.  Not only was the cake itself in it's own adorable tin (which will make a lovely keepsake) but also in a box so there was no risk of it moving or getting squashed.  Inside the box you also get balloons, a party blower, candles and a card which is perfect because with this one order you really do get everything you need!
 
The letterbox cake is available in a variety of designs including Birthdays, Christmas, Humour and One Direction as well as many others.  I also love that you are able to create your own, so you simply send Baker Days the pictures and they will personally make your very own unique cake.  This makes the whole process very exciting and one I will definitely be trying again at some point in the future.
 
As for flavours, there are a whole host on offer so there really is something to suit everyone, even those which special dietary requirements. The options are:
  • Sponge cake
  • Chocolate Chip made with Belgian chocolate
  • Fruit Cake
  • Gluten wheat free
  • Gluten Free
The Baker Days Letterbox cake aims to feed 3-4 people so is perfect for a small group and not only does the design look pretty but the taste is amazing.  The sponge is light and moist and the cake itself is sweet without being too much.  This is a really delicious cake and my family really enjoyed sharing it with me.

Sweet Treats

Today's post is slightly different from those I have done before but I wanted to share these sweet treats with you.. the blogger inside me couldn't resist! Last week I stumbled upon a lovely farmers market in London which had stalls full of foods from around the world, both sweet and savoury.  My friend and I found one stall particularly interesting and although I don't have a strong sweet tooth I absolutely love baking (I find it creative and relaxing) so I love to look at the sweet treats people have made and try new things.

The display was beautiful and included a huge number of desserts ranging from cakes to pastries to meringues.  We decided to buy a few of these treats and after two trips back to the stall and a lot of debating we decided on the below delights.
